What is fair trade, a.ka. fairly traded coffee?


Fair Trade certification helps family farmers in developing countries to gain direct access to international markets, as well as to develop the business capacity necessary to compete in the global marketplace. By learning how to market their own harvests, Fair Trade farmers are able to bootstrap their own businesses and receive a fair price for their products. This leads to higher family living standards, thriving communities and more sustainable farming practices. Fair Trade empowers farming families to take care of themselves - without developing dependency on foreign aid.

 
  • The Fair Trade Certified label guarantees that farmers and workers received a fair price for their product. This ensures that farmers can feed their families and that their childern can go to school instead of workin in fields.

What does USDA Organic Coffee mean?
Why is it important?

Certified Organic means that the coffee grower is not using pesticides, herbicides, or fungicides to help the growth of their crops. Thus we are not ingesting harmful chemicals within our coffees or lattes.

 
  • In this century, coffee, which is the world's second largest traded food commodity, has also been one of the most chemically treated food crops in the world. It is being sprayed, without regulation, with DDT, pesticides, herbicides and fungicides which have been determined to be hazards to good health and to the environment.

  • This affects not only the farmers who grow the coffee in the coffee producing areas of the world, but also their families, their land, their water, and the consumer. The pesticide residues enter the ground and are systemically transported into the beans which in turn become our beverage.
  • By contrast, organic agriculture focuses on building healthy soil through composting, inter-cropping, terracing, introduction of appropriate biological pest control, shade trees such as mangoes and banana, and a whole system of compatible, sustainable agriculture for the coffee trees.
  • Drinking organic coffee promotes the health of the environment, the health of the coffee grower, and the health of the coffee drinker.
   
Loose Leaf Teas
We use only loose leaf teas that come directly from the importer. This means that you will get a better flavor, aroma, freshness that you will not find in prepackaged teas, and a variety of flavors that is uncompairable.
 

There are seven factors that effect the quality of brewed tea:

  • The quality of the tea
  • The quality of the water
  • Correct measurement
  • Correct steeping temperature
  • Correct steeping time
  • Allowing the tea leaf to expand fully
  • Separating the leaf from the liquid at the end of the steeping process
 

Black tea:
Allowed to wither, which precedes a process called oxidation (sometimes incorrectly referred to as fermentation) during which water evaporates out of the leaf and the leaf absorbs more oxygen from the air. Black teas usually undergo full oxidation, and the results are the characteristic dark brown and black leaf, the typically more robust and pronounced flavors of black teas, and, when brewed appropriately, a higher caffeine content compared to other teas (50-65% of coffee, depending on the type and brewing technique).

Green tea:
Allowed to wither only slightly after being picked. Then the oxidation process is stopped very quickly by firing (rapidly heating) the leaves. Therefore, when brewed at lower temperatures and for less time, green teas tend to have less caffeine (10-30% of coffee). Greens also tend to produce more subtle flavors with many undertones and accents that connoisseurs treasure.

Oolong tea (also known as wulong tea):
Allowed to undergo partial oxidation. These teas have a caffeine content between that of green teas and black teas. The flavor of oolong (wulong) teas is typically not as robust as blacks or as subtle as greens, but has its own extremely fragrant and intriguing tones. Oolongs (wulongs) are often compared to the taste and aroma of fresh flowers or fresh fruit.
